Gefilte fish for Passover seder
dinners usually comes from jars in the supermarket, or perhaps
from a fancy food market. Now there is another alternative, a
bit closer to homemade: A & B Famous Gefilte Fish, a raw
mixture sold frozen that is easy to cook.
It comes in four styles: sweet; less sweet; sugar free and salmon
gefilte fish which is also sweet. All are sold in 1lb.-6oz. rolls
and can be cooked without thawing. If the fish is thawed , it
can be formed into balls and cooked. The salmon takes 35 minutes
but the others need at least 60 minutes. Adding pepper, salt
and a little vinegar to the cooking liquid, in
addition to onions and carrots enhances the flavor.
The kosher-for-Passover variety is made with mash potatoes, because
some orthodox Jews will not eat matzoh meal that has been in
contact with liquid during Passover. Matzoh meal is used for
the non-Passover kind. But in taste and texture, it is hard to
tell the difference.
A & B Famous Gefilte Fish retails at about $6.99 and is sold
at the Kosher Marketplace, 2442 Broadway (90th St.), where sample
tastes are available, and at Shoprite, Edwards and Stop N' Shop
among other outlets.
